Spicy Shredded Chicken

OK, at the risk of becoming a recipe blog, I am posting another one, this time in a response from Sarah who upon her latest pilgrimage home discovered my spicy shredded chili chicken and has asked for the recipe to inflict on unsuspecting Aggies
I did a quick check of the internets and found that my secret recipe (that Linda cut out from the newspaper) is printed verbatim hundreds of times everywhere from Martha Stewart to Bikers with Crock Pots. (search “chili chicken tacos”) So here it is with my comments because you might like to know

Serves: 4

Total Time: 4-8 hr
Prep Time: 15 min
Ingredients
2 pounds (about 6) boneless, skinless chicken thighs – I use breasts, about 5

Directions
  1. In slow cooker, combine chicken, garlic, salsa, chiles, chili powder, 1 teaspoon salt, and teaspoon pepper. Cover; cook on high, 4 hours (or on low, 8 hours).
  2. Transfer chicken to a serving bowl, and shred, using two forks; moisten with cooking juices. Serve in taco shells, with toppings, if desired.

and now back to our show

One of my offspring chided me about not having more visual evidence of our NW coast adventure. I attempted to create a really slick slideshow, I have very specific requirements – know what? It’s a huge undertaking and next to impossible in this fast moving blogosphere. Oh sure, i could crank one out in about 6 min but not one like Cecil B DeChristy has envisioned.

So, you get the standard Google photo album, with no narration, no animations, and no humorously enlightening slides. But just like the lunar landing – it really did happen, click below for a smattering of vacation habeas corpus. I did manage to work in one special feature, the photos are mapped so you can see where in the world Waldo took the particular shot.

More Bread

I was asked by a fried to share a recipe I use to make flatbread, I though you might like to know too.
I got this from my favorite recipe site http://www.allrecipes.com/



Syrian Bread Recipe
PREP TIME
20 Min
COOK TIME
10 Min
READY IN
3 Hrs
Original recipe yield 8 small loaves
INGREDIENTS
  • 1 1/8 cups water
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon white sugar
  • 1 1/2 teaspoons salt
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons active dry yeast

DIRECTIONS

  1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Dough cycle; press Start.
  2. Preheat oven to 475 degrees F (245 degrees C).
  3. Once the dough has risen, turn it out onto a lightly floured surface. Divide the dough into eight equal pieces and form into rounds. Cover the rounds with a damp cloth and let rest.
  4. Roll dough into thin flat circles, about 8 inches in diameter. Cook two at a time on preheated baking sheets or a baking stone until puffed up and golden brown, about 5 minutes. Repeat for remaining loaves

Thin pieces of dough and a really hot grill are the keys. Its really easy, it just takes some time. Let me know if you try it.

One Ring to Rule them All

Before I expand on Linda and my Lewis & Clark like expedition, I have more urgent news to report. It was Ring Day in Aggieland yesterday. This is the day the seniors who have completed 95 hrs by ordering deadline get to pick up their ultimate symbol of Aggie pride - their Aggie Ring.






Sarah and Greg were among the 3000 students who gathered around the great ring like the squezzy aliens in Toy Story waiting to be "chosen". Actually, they waited in line at 6am just to get and appointment to pick up their ring.




For those outlanders among us who have never been to College Station - this is a BIG DEAL, I have seen less excitement at graduation ceremonies. Parents, strollers and grand parents created an maroon mob that produced smiles, congratulations and digital cameras in every direction.





Congratulations Sarah and Greg - now for that final offensive to that diploma!
