Spicy Shredded Chicken
I did a quick check of the internets and found that my secret recipe (that Linda cut out from the newspaper) is printed verbatim hundreds of times everywhere from Martha Stewart to Bikers with Crock Pots. (search “chili chicken tacos”) So here it is with my comments because you might like to know
- 4 clove(s) garlic, thinly sliced
- 1/2 cup(s) prepared tomato salsa at least, plus more for serving
- 1 to 2 tablespoons chopped canned chipotle chiles in adobo – I use at least twice that much, maybe half a can. The ones I buy come whole in the can, give em a little chop before you add to the pot
- 1 tablespoon chili powder
- Coarse salt and ground pepper
- 8 hard corn taco shells – soft flour tortillas are our favorite
- Cilantro, shredded cheese, lime wedges, and sour cream, for serving – in our house avocados or guacamole are required
- In slow cooker, combine chicken, garlic, salsa, chiles, chili powder, 1 teaspoon salt, and teaspoon pepper. Cover; cook on high, 4 hours (or on low, 8 hours).
- Transfer chicken to a serving bowl, and shred, using two forks; moisten with cooking juices. Serve in taco shells, with toppings, if desired.

and now back to our show
One of my offspring chided me about not having more visual evidence of our NW coast adventure. I attempted to create a really slick slideshow, I have very specific requirements – know what? It’s a huge undertaking and next to impossible in this fast moving blogosphere. Oh sure, i could crank one out in about 6 min but not one like Cecil B DeChristy has envisioned.
So, you get the standard Google photo album, with no narration, no animations, and no humorously enlightening slides. But just like the lunar landing – it really did happen, click below for a smattering of vacation habeas corpus. I did manage to work in one special feature, the photos are mapped so you can see where in the world Waldo took the particular shot.

More Bread
PREP TIME | 20 Min |

Original recipe yield 8 small loaves |
- 1 1/8 cups water
- 2 tablespoons vegetable oil
- 1/2 teaspoon white sugar
- 1 1/2 teaspoons salt
- 3 cups all-purpose flour
- 1 1/2 teaspoons active dry yeast
DIRECTIONS
- Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Dough cycle; press Start.
- Preheat oven to 475 degrees F (245 degrees C).
- Once the dough has risen, turn it out onto a lightly floured surface. Divide the dough into eight equal pieces and form into rounds. Cover the rounds with a damp cloth and let rest.
- Roll dough into thin flat circles, about 8 inches in diameter. Cook two at a time on preheated baking sheets or a baking stone until puffed up and golden brown, about 5 minutes. Repeat for remaining loaves
- I don’t have a bread machine so I use my food processor, I use a plastic blade that came with my unit
- I warm the water and add the yeast to it 5-10 min before I mix the dough
- mix all the dry ingredients in the processor
- slowly pour in the oil and water while its mixing
- process it for about 45 sec or until the dough makes a ball and cleans all the little pieces off the side of the bowl
- rub some oil in a bowl 3-4x the size of your dough ball
- take out your dough, form a ball a rub a little oil over it, put it in the bowl and cover with plastic wrap
- let it rise until doubled, about 90 min or so
- Once the dough has risen, turn it out onto a lightly floured surface. Divide the dough into eight equal pieces and form into balls. Cover the rounds with a damp cloth and let rest another 30 min.
- roll your dough balls really thin, use flour as needed to keep them from sticking
- turn your BBQ grill up as high as it will go
- when you put your bread on the grill, it will start to bubble and puff, it takes about 30 sec on my grill, use tongs and turn them over another 30 sec
- when you stack up your breads brush some melted butter on them, it not only tastes good, it keeps them from getting hard when the cool

One Ring to Rule them All
Sarah and Greg were among the 3000 students who gathered around the great ring like the squezzy aliens in Toy Story waiting to be "chosen". Actually, they waited in line at 6am just to get and appointment to pick up their ring.
For those outlanders among us who have never been to College Station - this is a BIG DEAL, I have seen less excitement at graduation ceremonies. Parents, strollers and grand parents created an maroon mob that produced smiles, congratulations and digital cameras in every direction.
Congratulations Sarah and Greg - now for that final offensive to that diploma!
